Position Summary:
This position will support the Head of F&B in the smooth running of administrative and operational aspects of F&B within the Resort. Supporting and implementing initiatives and quality standards in all areas of the food operation in order to facilitate the maximization of revenue against enhanced visitor experience. To assist the Head of Food & Beverage to deliver against the overall park strategy and to manage resources and ensure team development. Additional duties may be required of this position in order to meet the needs of the business
Key Objectives:
To support the delivery of the F&B strategy in conjunction with the Management Team.
To ensure full compliance with POS / Inventory processes, Merlin SOPs and all legal requirements.
To drive a department focused on exceptional guest experience achieving all KPI targets.
To help achieve the F&B budget revenue and profit target. Applying high- street marketing approaches (within the context of the LEGOLAND brand) to ensure revenue maximization and robust cost management systems to convert to profit.
To fulfil shifts as required during a seven-day trading week, involving weekend and Public Holiday commitment.
Scope and Responsibilities:
Job Responsibility
Promote the Company standards and values to ensure that they are fully embedded across the Food & Beverage department
Ensure designated area of responsibility within the Food & Beverage Department consistently delivers on all agreed key performance indicators.
Via direction of line reports, deliver at or below the agreed operating budgets for the Food & Beverage department.
Operations
Ensure strict compliance with all relevant Health and Safety legislation and requirements.
Ensure that LEGOLAND Korea sets the industry standard with regard to Food safety and procedures.
To ensure full compliance with Health & Safety legislation, including food hygiene
Delivery of the F&B strategy in conjunction with the Head of F&B.
To drive designated areas to be focused on exceptional guest experience achieving all food KPI targets.
To work alongside the Head of F&B to achieve the F&B budget revenue and profit target.
To fulfil shifts as required during a 7 day trading week, involving some weekend and Public Holiday commitment.
Implement strategic initiatives of the business and the five-year plan.
Ensure back of house administration of our EPOS System produce reports based on sales mix, anomaly tracking, till screen set up, additional sales item set up and monitor correct use.
Responsible for recruitment, training, coaching and development. Lead the team with a ¡®hands on¡¯ approach in order to allow for and support future succession.
Ensure staff promote a professional image by adhering to company policies and procedures.
Encourage efficiency ensuring staff work to their best ability and attend any issues with a sense of urgency.
Background and Experience:
Requires at least four years of progressive experience in an F&B environment.
Experience in a theme park or related industry preferred.
Knowledge of computer systems including point of sale, and related inventory management systems is required.
