Position Summary:
-This position will support the Asst. F&B Manager in the smooth running of administrative and operational aspects of F&B, especially culinary part within the Resort. Supporting and implementing initiatives and quality standards in all areas of the food operation to facilitate the maximization of revenue against enhanced visitor experience. To assist the Head of Food & Beverage to deliver against the overall park strategy and to manage resources and ensure team development.
Additional duties may be required of this position to meet the needs of the business.
Key Objectives:
-To support the delivery of the F&B strategy in conjunction with the Management Team.
-To lead culinary team to delivery quality foods for breakfast, lunch and dinner in all Merlin¡¯s F&B operation standards.
-To drive a department focused on exceptional guest experience achieving all KPI targets.
-To fulfil shifts as required during a seven-day trading week, involving weekend and Public Holiday commitment.
Scope and Responsibilities:
Job Responsibility
-Promote the Company standards and values to ensure that they are fully embedded across the Food & Beverage department.
-Ensure designated area of responsibility within the Food & Beverage Department consistently delivers on all agreed high standards food quality based on fodo safety guideline.
-Via direction of line reports, deliver at or below the agreed operating budgets for the Food & Beverage department.
1.Operations
-Ensure strict compliance with all relevant Health and Safety legislation and requirements.
Ensure that LEGOLAND Korea sets the industry standard about Food safety and procedures.
To ensure full compliance with Health & Safety legislation, including food hygiene
Delivery of the F&B strategy in conjunction with the Head of F&B.
To drive designated areas to be focused on exceptional guest experience achieving all food KPI targets.
To work alongside the Head of F&B to achieve the F&B budget revenue and profit target.
To fulfil shifts as required during a 7-day trading week, involving some weekend and Public Holiday commitment.
Ensure staff promote a professional image by adhering to company policies and procedures.
Encourage efficiency ensuring staff work to their best ability and attend any issues with a sense of urgency.
2.Financial
-Manage production plan based on right ordering, inventory management and waste management to reduce financial costs.
Ensure all business goals and results are clearly communicated to your direct reports through daily/weekly meetings and encourage two-way group dialogues.
Take full responsibility for managing and meeting assigned budget(s)
Assist the Head of Food & Beverage in deciding the product and sales mix for the year, pricing strategy, quality standards, health and safety and hygiene policies and procedures.
3.Development
-Drive culinary cooking training instilling a best practice culture amongst employees ensuring employees are accountable for their actions.
Research and report latest high street / industry standards to ensure the products/food offering we sell are appealing in the context of the the external marketplace.
Identify training programs to aid own development.
