Position Summary:
The Food & Beverage Supervisor reports to the Outlet Assistant Manager or Outlet Manager and is responsible for supervising daily operations, creating a positive first impression for guests, and leading and training the Food and Beverage service staff to maintain a customer-focused attitude. This role requires flexibility, including the ability to work rotational shifts, weekends, holidays, and overnight shifts.
Key responsibilities include ensuring that staff adhere to Standard Operating Procedures (SOPs) and overseeing daily service operations to guarantee a consistent and outstanding guest experience. The Supervisor assists the Outlet Assistant Manager or Outlet Manager in managing the overall Front of House (FOH) services for designated venues, including outlets and attached bar operations, revenue management, safety and sanitation management, cost and expense management, team building, and employee development.
The ideal candidate is a flexible and dynamic problem solver with exceptional leadership abilities, capable of empowering staff to deliver superior customer service to resort guests, associates, and visitors. The Supervisor acts as a brand ambassador, providing leadership and strategic direction to the assigned outlet(s).
Primary Duties and Responsibilities: (include but not limited to)
Business Impact/Results:
- Support the Outlet¡¯s daily operation in managing the outlet¡¯s financial performance.
- Ensure high operational standards on a daily basis taking appropriate action to rectify identified poor standards.
- Ensure the outlet(s) provide relevant food & beverage offerings that appeal to its visitor.
- Deliver guest satisfaction targets through exceptional unit standards, maximum product availability and ensure the team genuinely exceed customer expectations.
- Execute outlet(s)¡¯ promotion plan to ensure sales are maximized through the outlet(s)¡¯ operation.
- Ensure stock holding levels to ensure optimum use of working capital. Achieve specific stock levels, ensuring adequate monitoring procedures are in place.
- Support Outlet Management to implement a system for consistently measuring own performance against competitors.
- Perform shifts as required and as a Supervisor (including weekends and Public Holidays) to ensure that the operation is geared to meet the guest and employee needs.
Communication:
- Keep close communication channels with the culinary counterpart to ensure seamless F&B product and service.
- Address any operational challenges within the Food & Beverage Department through commitment, drive, energy, and a positive approach.
- Drive sales and understand current consumer trends & demands.
- Demonstrate and promote Mohegan core values to all colleagues.
Decision Making & Autonomy:
- Support Management with daily operations and the unit(s)¡¯ look and feel so that they are consistent with Inspire brand standards.
- Ensure all daily reports are properly shared with the management team with proper reporting tools.
- Ensure all guest(s) comments are properly shared with the management team with follow-ups.
Applied Knowledge & Specialist Skills:
- Apply the latest industry standards to ensure the offerings we provide are appealing in the context of the external marketplace.
- Align the Resort & F&B strategic plans and in conjunction with the teams, assist the management team with a short-term development plan for the F&B function, incorporating sales trends and expectations, customer feedback, and relevant financial return expectations.
- Work closely with the Outlet Management to ensure F&B Outlet(s) is/are adhering to brand standards on signage and products.
- Demonstrate and encourage staff how each food and beverage offering should be presented to the guest, to ensure consistency and improve the speed of service.
Managing Resources:
- Develop the team members through regular performance reviews, action planning, encouragement, and on-the-job coaching.
- Ensure employee development initiatives are in place and that these are regularly monitored.
- Drive customer service training as a best practice culture amongst employees ensuring employees are accountable for their actions.
- Ensure training programs result in sustained improvement in service and operational standards across responsible outlet(s).
- Assist Outlet management to improve team satisfaction scores where possible on employee satisfaction, leadership capabilities, understanding of job and responsibility, teamwork, and working environment.
Minimum Education and Qualifications:
- Associate degree or bachelor¡¯s degree in hospitality or a related field recommended.
- Minimum 5 years of upscale luxury hotel experience required.
- Minimum 3 years previous Supervisor (Minimum 5 years previous Line-level experience) and experience in high volume complex casino/hotel.
- Excellent leadership experience in pre-opening project management and hotel settings, with a passion to provide exemplary guest service.
- Must have previous experience in implementing and evaluating guest service standards.
- Great written and verbal communication skills.
- Great organizational skills, time management & multi-tasking skills.
- Good command of knowledge of MS Word, Excel, PowerPoint, and Outlook.
- Knowledge of the property and local areas and destinations.
- Possess a high level of maturity to deal with the most discriminating guest requests and requirements.
- Good English writing and speaking is preferred.
- Chinese (Mandarin and/or Cantonese) and/or Japanese is plus.
Physical Demands and Work Environment:
- Familiar with the operation work environment.
- Must be able to walk or stand for extended periods of time.
- Must be able to work flexible hours including weekends, holidays, and late nights.
- Ability to work on his/her own feet for eight hours or more.
